Cutting

Once the cattle were moved into the central area, cowboys would switch out horses with others in the remuda. They would select the best cutting horses and begin to separate the cattle that belonged to each outfit. “Cutting brought out the very best in cowboy skills and cooperation between man and horse.” A cowboy would identify a cow in the herd that had his ranch’s brand. He would ride over and direct his cutting horse towards that cow. The horse would then “cut out” that cow from the rest of the animals being held.
