Quinoa with Raw Veggies

Ingredients: 

(1) Cup of Quinoa
*(2) Cups of Vegetable Stock (
can substitute chicken stock or water)
*(1) Lemon
*(1/2) tbsp butter
*(1/2) Onion
*(1) tbsp garlic
*(1) Cucumber
*(1) Red Bell Pepper
*(6) Celery Stalks
*(1) Ripe Avocado
*(1/3) Cup of Feta Cheese
*Pinch of salt
*Pinch of pepper

Feel free to add any other raw veggies that you like!

Preparation and cooking instructions: 
1. Chop 1/2 an onion 2. Heat pan to medium heat and melt butter 3. Add onion and garlic and saute 4. Add quinoa, juice of 1 lemon, and vegetable stock* and stir until it comes to a boil, then cover and simmer for about 15 minutes or unitl all liquid is absorbed 5. While quinoa is simmering, chop veggies to desired thickness 6. When quinoa is finished add your veggies, pinch of salt and pepper, and feta cheese 7. Enjoy!
