Penne with Mushroom Mascarpone Cream Sauce

2-3 tablespoons olive oil
1/4 C dry white wine
8 oz. penne pasta
4 oz. mascarpone cheese
8 oz. crimini mushrooms, sliced
2 cloves garlic, minced
pinch of nutmeg
1/4 cup grated Parmesan cheese
salt and pepper, to taste

Preparation and cooking instructions: 
Cook the pasta according to package instructions, until al dente. Reserve about a 1/4 cup of pasta water for the sauce. Heat a pan with olive oil. Add garlic and cook for about 30 seconds. Mix in sliced mushrooms and nutmeg and stir for about 5-7 minutes, until mushrooms soften and reduce in shape. Add in white wine and stir until reduced for about 3-5 minutes. Stir in mascarpone cheese, pasta water and Parmesan cheese. Season with salt and pepper. Add pasta and toss well to incorporate ingredients. To serve, top with fresh pepper and more grated Parmesan cheese.
